4 salmon fillets, approximately 150g each, skinless
Dairy
15g of butter
Oils & Vinegars
2 tbsp of olive oil
150ml of sunflower oil, or rapeseed
olive oil, for drizzling

2 egg yolks
1 tbsp of Dijon mustard

lime zest, to serve
1 garlic clove, minced
1 lime, juiced and zested
400g of new potatoes
1 lime, juiced and zested
Beverages
2 tbsp of hot water
50ml of water

coriander leaves, 1 small handful, chopped
1 handful of coriander leaves, roughly chopped
Spices & Dried Herbs
5 saffron stamens, good quality
