Pan-roasted salmon steaks with lime and coriander mayonnaise and warm crushed potatoes

Ingredients

Fish & Shellfish

  • 4 salmon fillets, approximately 150g each, skinless

Dairy

  • 15g of butter

Oils & Vinegars

  • 2 tbsp of olive oil
  • 150ml of sunflower oil, or rapeseed
  • olive oil, for drizzling

Store Cupboard

Fruit & Vegetables

  • lime zest, to serve
  • 1 garlic clove, minced
  • 1 lime, juiced and zested
  • 400g of new potatoes
  • 1 lime, juiced and zested

Beverages

  • 2 tbsp of hot water
  • 50ml of water

Salad & Fresh Herbs

  • coriander leaves, 1 small handful, chopped
  • 1 handful of coriander leaves, roughly chopped
