Runner bean and ricotta pie

Ingredients

Store Cupboard

  • 250g of plain flour
  • 2 egg yolks
  • 1/2 tsp salt
  • salt

Dairy

  • 125g of unsalted butter, cold and diced
  • 3 tbsp of milk, to glaze

Beverages

  • 2 tbsp of ice cold water

Fruit & Vegetables

  • 1kg runner beans
  • 3 garlic cloves, (fat ones!), peeled
  • 1/4 tsp chilli flakes
  • 1 lemon, zested

Cheese

  • 400g of ricotta

Salad & Fresh Herbs

  • 1 bunch of basil, leaves picked
  • 1/2 bunch of parsley, chopped

Spices & Dried Herbs

  • 1/2 nutmeg, grated

Oils & Vinegars

  • 60ml of olive oil
