Oven roasted rack of lamb, matchstick potatoes with fenugreek leaves, wild mushroom pulao

Ingredients

  • 2 9-bone rack of lamb, French-trimmed

Spices & Dried Herbs

  • 1 tsp ginger
  • 1 tsp garlic paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp ground cumin
  • 4 sprigs of fresh coriander
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1 tsp cumin seeds

Fruit & Vegetables

  • 1/2 tsp chilli powder
  • 1 Maris Piper potato, peeled
  • 100g of mixed seasonal wild mushrooms, chopped

Store Cupboard

  • 1 tsp black peppercorns, cracked
  • 250g of basmati rice
  • salt

Oils & Vinegars

  • 1 tbsp of malt vinegar
  • 1 tbsp of vegetable oil
  • 1 tbsp of vegetable oil
  • 15ml of vegetable oil

Salad & Fresh Herbs

  • 1 handful of fenugreek leaves
  • 10g of coriander leaves

Dairy

  • 1 knob of butter
  • 2 tbsp of cream
