Ingredients

1 medium duck, giblets removed
Beverages
250ml of Madeira
Cooking Sauces
2l brown chicken stock
Store Cupboard
2 tbsp of soy sauce
4 tbsp of hoisin sauce
2 tbsp of honey
1 packet of Chinese pancakes
Fruit & Vegetables
1 onion, peeled and quartered
1 leek, halved
2 carrots, peeled and quartered
1 bulb of garlic, halved lengthways
1 orange, halved
2 red chillies, halved
1 cucumber, cut into julienne
4 spring onions, cut into julienne
Spices & Dried Herbs
2 cinnamon sticks
3 star anise
2/3 handful of coriander stalks
Salad & Fresh Herbs
80g of fresh ginger, peeled and roughly chopped
