Roast sirloin of beef with mushrooms, brandy and roasted potatoes

Ingredients

Fresh Meat

  • 2kg sirloin of beef

Dairy

  • 50g of unsalted butter
  • 200g of crème fraîche

Fruit & Vegetables

  • 1 bulb of garlic, halved lengthways
  • 500g of roasting potatoes, halved
  • 2 onions, peeled and sliced
  • 250g of button mushrooms, sliced
  • 1 garlic clove, crushed

Salad & Fresh Herbs

  • 1/4 bunch of thyme
  • 1/2 bunch of thyme
  • 1/4 bunch of thyme, tied with string
  • 1/4 bunch of tarragon, tied with string
  • 1/4 bunch of tarragon, leaves chopped

Store Cupboard

  • 1/4 bunch of rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper, freshly ground
  • 1 tsp sea salt
  • 250ml of chicken stock
  • 1/2 tsp salt
  • 1/2 tsp black pepper, freshly ground

Oils & Vinegars

  • 2 tbsp of vegetable oil
  • 4 tbsp of vegetable oil
  • 1 tbsp of vegetable oil

Spices & Dried Herbs

  • 1/2 tsp paprika

Beverages

  • 400ml of brandy
  • 200ml of red wine
