Tomato and barley risotto faces

Ingredients

Cereals, Grains & Pasta

  • 200g of pearl barley

Fruit & Vegetables

  • 2 shallots, finely diced
  • 3 garlic cloves
  • 4 baby corn
  • 1 carrot, cut into thin discs
  • 8 green beans
  • 2 beetroots, cooked, cut into discs
  • 8 tomatoes
  • 3 shallots, diced
  • 2 garlic cloves

Cheese

  • 25g of Parmesan, grated (or use a vegetarian alternative)

Oils & Vinegars

  • 1 tbsp of vegetable oil
  • 1 tbsp of olive oil

Store Cupboard

  • 1 pinch of salt
  • 800ml of vegetable stock
