801g of raspberries
85ml of lemon juice
1 lemon, peel only
1 orange, peel only

1 cinnamon stick

180g of caster sugar
2 vanilla pods, split and scraped
26ml of vanilla essence
25ml of cornflour, mixed with a little water to form a paste
25g of icing sugar
2 bronze gelatine leaves, soaked in cold water

75ml of double cream
75g of crème fraîche

1 brioche loaf, crusts removed, cut into thin slices
