400g of globe artichoke, halved, some reserved for garnish
1 lemon, juice and halves of lemon reserved
1 small onion, sliced
1 leek, washed and chopped

250ml of white wine
Oils & Vinegars
90ml of white wine vinegar
200ml of olive oil

1/2 head of garlic
1/2 tsp ground white pepper
rock salt
500g of puff pastry
1/2 tsp salt
Salad & Fresh Herbs
5 sprigs of fresh thyme
2 bay leaves
1 tsp coriander seeds
1 tbsp of tarragon, finely chopped
1 tbsp of chervil, chopped
1 tbsp of parsley, chopped

50g of butter
50ml of cream
