Queen Anne's artichoke tart

Ingredients

Fruit & Vegetables

  • 400g of globe artichoke, halved, some reserved for garnish
  • 1 lemon, juice and halves of lemon reserved
  • 1 small onion, sliced
  • 1 leek, washed and chopped

Beverages

  • 250ml of white wine

Oils & Vinegars

  • 60ml of white wine vinegar
  • 100ml of olive oil
  • 100ml of olive oil
  • 30ml of white wine vinegar

Store Cupboard

  • 1/2 head of garlic
  • 1/2 tsp ground white pepper
  • rock salt
  • 500g of puff pastry
  • 1/2 tsp salt

Salad & Fresh Herbs

  • 5 sprigs of fresh thyme
  • 2 bay leaves
  • 1 tsp coriander seeds
  • 1 tbsp of tarragon, finely chopped
  • 1 tbsp of chervil, chopped
  • 1 tbsp of parsley, chopped

Dairy

  • 50g of butter
  • 50ml of cream
