Potato pavé with goat’s curd, pumpkin and crispy sage

Ingredients

Fruit & Vegetables

  • 6 large potatoes, King Edward or a similar floury variety, peeled
  • 4 garlic cloves, peeled and grated
  • 3 medium red onions
  • 1 pumpkin, either onion squash or crown prince
  • 1 pinch of chilli flakes

Oils & Vinegars

  • 600ml of vegetable oil
  • vegetable oil, for brushing and frying
  • extra virgin olive oil

Salad & Fresh Herbs

  • 2 tbsp of thyme leaves, chopped
  • 1 radicchio, or red chicory if you can’t find radicchio
  • 1 bunch of sage
