Pot-roasted partridge with grapes, gnocchi and mushrooms

  • 1 carrot, peeled and cut into quarters
  • 1 onion, peeled and cut into quarters
  • 50g of grapes, halved (a mixture of white and black)
  • 700g of floury potatoes
  • 50g of chestnut mushrooms, quartered
  • 50g of girolles
  • 1/2 garlic clove

Beverages

  • 50ml of white wine

Store Cupboard

  • 250ml of chicken stock
  • salt
  • pepper
  • 1 egg yolk
  • 50g of flour
  • salt

Salad & Fresh Herbs

  • 1 sprig of thyme
  • 1 handful of chopped parsley
  • 1 handful of chopped tarragon
  • 1 tbsp of chopped parsley
  • 1 tbsp of chopped chives
  • 1 tbsp of chopped chervil
  • chopped parsley

Dairy

  • 60ml of double cream
  • 1 knob of butter
  • 1 egg
  • 12g of butter

Oils & Vinegars

  • 1 dash of oil
