  • 475g of strong white flour

  • 2 eggs, for glazing
  • 30g of breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 200ml of chicken stock, reduced
  • 1 gelatine leaf
  • 50g of caster sugar
  • 50g of baby capers

Fresh Meat

  • 200g of pork belly, minced
  • 500g of pork shoulder, 300g minced, 200g diced

Spices & Dried Herbs

  • 1 pinch of nutmeg, grated
  • 20 sage leaves, finely chopped

Salad & Fresh Herbs

  • 1 tsp thyme, chopped
  • 100g of rocket

Cheese

  • 200g of Colston Basset stilton

Fruit & Vegetables

  • 2 banana shallots
  • 2 white chicory
