Pork chop with anchovy buttered sprouts and peach mustard

Ingredients

Fresh Meat

  • 2 pork chops, on the bone, around 250g each and at least 2.5cm thick

Store Cupboard

  • salt
  • 1 sprig of rosemary
  • 6 anchovies
  • 30g of brown sugar
  • 2 tsp Dijon mustard
  • 1 tsp wholegrain mustard
  • salt

Dairy

  • 1 knob of butter
  • 80g of salted butter

Fruit & Vegetables

  • 500g of sprouts, outer leaves removed and halved
  • 2 peaches, or 3 if they're small

Oils & Vinegars

  • 1 dash of cider vinegar, or fresh lemon juice
  • 1 tsp white wine vinegar
