Ingredients

  • 2 wood pigeons, whole

  • unsalted butter, for cooking
  • 225g of buttermilk

  • vegetable oil, for frying
  • 1 dash of vegetable oil
  • 7ml of vinegar, or ideally pickling liquor (either homemade or from a jar of gherkins)

  • 2 red onions, quartered
  • 1/2 garlic bulb
