Crispy pig head and Goan sausage with spiced apple chutney

Ingredients

Fresh Meat

  • 1 pig's head, halved

Oils & Vinegars

  • 2 tbsp of rapeseed oil
  • vegetable oil, for deep-frying
  • 200ml of malt vinegar
  • 50ml of rapeseed oil
  • 20ml of malt vinegar

Speciality Ingredients

  • 300g of Goan sausage, or chorizo

Fruit & Vegetables

  • 100g of red onion, finely chopped
  • 2 large cooking apples, peeled, cored and finely chopped
  • 1 red onion, finely chopped

Spices & Dried Herbs

  • 15g of curry leaves, ideally fresh, plus a few extra to garnish if desired
  • 50g of whole dried kashmiri chilli
  • 10g of cloves
  • 10g of cumin seeds
  • 1 cinnamon stick
  • 5 star anise
  • 10 green cardamom pods
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 knob of ginger, thumb-sized, peeled and finely chopped
  • 1 tsp Kashmiri chilli powder

Store Cupboard

  • 10g of black mustard seeds
  • 200g of plain flour
  • 300g of Panko breadcrumbs (1)
  • 3 tsp soft brown sugar
  • salt, to taste
