Piccolo tomato tartare with soy cured egg yolk

Ingredients

Fruit & Vegetables

  • 25 Piccolo tomatoes
  • 1 tbsp of red onion, very finely chopped
  • 1/4 tsp red chillies, very finely chopped
  • 1 tsp lemon juice

Store Cupboard

  • 1 pinch of cane sugar
  • salt to taste
  • 2 egg yolks
  • 100ml of dark soy sauce
  • 1 egg yolk
  • 1/4 tsp Dijon mustard
  • salt to taste
  • 1/2 tsp crispy shallots

Spices & Dried Herbs

  • freshly ground black pepper to taste
  • freshly ground black pepper to taste

Salad & Fresh Herbs

  • 1 tsp thyme leaves
  • 1 tbsp of soft herbs, such as parsley and chives
  • 1 tbsp of chopped chives
  • 1 handful of salad leaves

Oils & Vinegars

  • 2 dashes of extra virgin olive oil
  • 1 tsp white wine vinegar
  • 200ml of vegetable oil
  • 25ml of extra virgin olive oil

Speciality Ingredients

  • 1 handful of edible flowers
