Patatas Bravísimas

Ingredients

Fruit & Vegetables

  • 4 large potatoes
  • 1 garlic bulb
  • 1 garlic clove
  • 375g of plum tomatoes
  • 1/2 bunch of spring onions, roughly chopped
  • 2 garlic cloves
  • 1 choricero dried pepper, hydrated in hot water then drained (optional)
  • 1/4 red pepper

Oils & Vinegars

  • vegetable oil, for deep-frying
  • 50ml of arbequina olive oil, plus 3 tbsp to cook the tomatoes
  • 60ml of cider vinegar

Store Cupboard

  • flaky sea salt
  • 2 egg yolks
  • 20ml of honey
  • 20g of flour
  • 1/2 tsp tomato purée
  • 100ml of chicken stock

  • 250ml of pomace oil, or a mixture of olive and vegetable oil

Salad & Fresh Herbs

  • 1/2 handful of parsley, chopped (plus a handful saved to garnish)

Spices & Dried Herbs

  • 2 dried chillies, hydrated in hot water then drained
