Ox cheek, porter and onion cottage pie

Ingredients

Fresh Meat

  • 1.5kg ox cheek, dry aged
  • 2 centre-cut beef marrow bones, 10cm long and cleaned of any sinew

Fruit & Vegetables

  • 3 carrots, peeled
  • 1/2 leek, trimmed
  • 3 onions, peeled and thinly sliced
  • 3 garlic cloves, peeled and halved
  • 2 Désirée potatoes

Salad & Fresh Herbs

  • 1/2 bunch of thyme

Spices & Dried Herbs

  • 2 star anise
  • 5g of peppercorns

Alcohol

  • 250ml of porter

Store Cupboard

  • 1.5l chicken stock
  • salt
  • black pepper

  • 1/2 bunch of rosemary

  • 40g of butter
  • 100ml of milk
