One-pot roast chicken with chorizo

Ingredients

Fresh Meat

  • 8 chicken thighs, skin on
  • 200g of chorizo sausage, sliced

Fruit & Vegetables

  • 800g of sweet potato, cut into chunks
  • 1 bulb of garlic, broken into cloves
  • 1 lemon, halved
  • 2 courgettes, cut into thick batons
  • 1 red chilli, deseeded and sliced
  • 240g of baby spinach

Store Cupboard

  • 200ml of chicken stock
  • 1 pinch of salt
  • 1 pinch of black pepper

Salad & Fresh Herbs

  • 2 tbsp of parsley, chopped

Oils & Vinegars

  • 2 tbsp of rapeseed oil
