Ingredients

  • 4 octopus tentacles, large and pre-cooked

Oils & Vinegars

  • rapeseed oil
  • 125ml of rapeseed oil
  • 125g of olive oil

Store Cupboard

  • flaky sea salt
  • 1 egg yolk
  • 1/2 tsp salt

Spices & Dried Herbs

  • freshly ground black pepper
  • 1 pinch of freshly ground white pepper

Speciality Ingredients

  • 1/2 tsp annatto seed
  • 15g of calamansi purée

  • 1 garlic clove, finely minced
