Mushroom and chestnut pâté with tarragon and fermented cranberries

Ingredients

  • 300g of chestnut mushrooms, chopped
  • 2 garlic cloves, sliced
  • 1 shallot, diced
  • 200g of cranberries
  • 1 orange, zested

Delicatessen

  • 10g of dried porcini mushrooms

Store Cupboard

  • 1 sprig of rosemary, leaves picked and finely chopped
  • 100g of cooked chestnuts, roughly chopped
  • salt
  • 15g of salt
  • 1 tbsp of raw honey, or agave if you'd prefer a vegan alternative
  • sea salt

Salad & Fresh Herbs

  • 2 sprigs of fresh tarragon
  • tarragon leaves

Oils & Vinegars

  • sherry vinegar, to taste
