Murgh makhani – butter chicken

Ingredients

Fresh Meat

  • 8 boneless chicken thighs

Cooking Sauces

  • 1 tbsp of ginger and garlic paste

  • 1 pinch of salt
  • 1 tbsp of clear runny honey
  • 2 tsp tomato paste
  • 1 tbsp of cashew nuts, toasted and roughly chopped

Dairy

  • 2 tbsp of Greek yoghurt
  • 25g of unsalted butter
  • 60ml of single cream
  • 4 knobs of butter

Spices & Dried Herbs

  • 2 tsp Kashmiri chilli powder
  • 1/2 tsp garam masala
  • 3 green chillies
  • 4 cardamom pods
  • 2 cinnamon sticks
  • 4 cloves
  • 1 tbsp of ginger, peeled and chopped
  • 1 tsp Kasoori methi, (dried fenugreek leaves)

Oils & Vinegars

  • 1 tbsp of vegetable oil
  • 2 tbsp of vegetable oil

Salad & Fresh Herbs

  • 4 bay leaves

Fruit & Vegetables

  • 10 tomatoes, cut into quarters
  • 1 tsp chilli powder
