Monkfish curry

Ingredients

Fish & Shellfish

  • 800g of monkfish fillet, cut into cubes

Fruit & Vegetables

  • 4 tomatoes, roughly chopped
  • 1 onion, finely sliced
  • 1 tsp chilli powder

Spices & Dried Herbs

  • 1/2 tsp fenugreek seeds
  • 1/2 tsp mustard seeds
  • 2 curry leaves
  • 1 inch piece ginger, cut into julienne
  • 1/2 tsp ground turmeric
  • 1 tsp ground cumin
  • 4 tsp ground coriander

Beverages

  • 200ml of water, hot

Store Cupboard

  • 100ml of coconut milk
  • salt

Salad & Fresh Herbs

  • 1 handful of coriander leaves, chopped
