8 King Edward potatoes, peeled and cut into chunks
2 leeks, washed and sliced
60g of butter
100ml of milk
1/2 bunch of flat-leaf parsley, small, chopped
1 pinch of salt

To start the dish, add the potatoes to a pot of cold water and bring to the boil. When the potatoes have been boiling for 5 minute, add the leeks

Once the potatoes are cooked, drain the water away and return the potatoes and leeks to the pan. Add the rest of the ingredients to the pan and mash everything together. Serve immediately
