Maldivian tuna curry

Ingredients

Fish & Shellfish

  • 500g of tuna steak, cut into 2.5cm pieces

Speciality Ingredients

  • 1 tbsp of coconut oil

Fruit & Vegetables

  • 3 garlic cloves, finely chopped
  • 1 onion, finely sliced

Spices & Dried Herbs

  • 2 cardamom pods, seeds only
  • 10 curry leaves, finely chopped
  • 1 green chilli, finely sliced
  • 1/2 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1 stick of cinnamon
  • fresh coriander, to garnish

Salad & Fresh Herbs

  • 1 knob of fresh ginger, 2.5cm in length, peeled and finely chopped

Store Cupboard

  • 1/2 tsp ground fennel seeds
  • 1/2 tsp black pepper
  • 400ml of coconut milk
  • sea salt
