Mackerel, tomato and samphire salad

Ingredients

Fish & Shellfish

  • 2 mackerel fillets, gutted, filleted, pin-bones removed

Fresh Meat

  • 4 slices of smoked streaky bacon, large dice

Fruit & Vegetables

  • 8 cherry tomatoes, halved
  • 8 vine tomatoes, ripe and roughly chopped
  • 2 garlic cloves, chopped
  • 1 red chilli, de-seeded and chopped

Salad & Fresh Herbs

  • 2 little gem lettuces, leaves separated
  • 110g of samphire
  • 10 basil leaves, torn

Store Cupboard

  • salt
  • 1 tbsp of sugar
  • salt
  • 1 tsp English mustard

Oils & Vinegars

  • 1 dash of olive oil
  • 2 tbsp of white wine vinegar
  • 1 tsp white wine vinegar
  • 300ml of light olive oil

Dairy

  • 3 free-range egg yolks
  • 50ml of double cream
