Lechon belly

Ingredients

Fresh Meat

  • 2.5kg pork belly with skin on

Fruit & Vegetables

  • 5 garlic cloves, crushed
  • 4 spring onions
  • 3 red chillies, stem removed
  • 1 red onion, finely diced
  • 1 garlic clove, finely chopped

Salad & Fresh Herbs

  • 25g of fresh ginger, finely chopped
  • 2 sticks of lemongrass, bruised

Store Cupboard

  • 1 tbsp of soy sauce
  • salt to season
  • 30ml of soy sauce
  • 12g of brown sugar

  • 2 tbsp of cane vinegar
  • Mang Tomas to taste
  • 125ml of cane vinegar

Spices & Dried Herbs

  • freshly ground black pepper to taste
