Tea-smoked barbecued lamb chops with spicy Korean miso

Ingredients

  • 8 lamb chops

Oils & Vinegars

  • 1 dash of olive oil
  • 1 tbsp of vegetable oil
  • 20ml of rice vinegar

Fruit & Vegetables

  • 1/2 red onion
  • 2 garlic cloves
  • 1 red chilli, roughly chopped
  • 1 aubergine
  • 1 lemon, juice only
  • 2 limes, cut in half

Salad & Fresh Herbs

  • 1 handful of coriander seeds
  • fresh ginger, 2 cm piece, peeled and roughly chopped
  • 1 bunch of chives, finely chopped

Store Cupboard

  • 20g of sea salt
  • 2 tsp miso paste
  • salt to season
  • black pepper to season
  • 15g of caster sugar
  • 1 egg yolk

Cereals, Grains & Pasta

  • 30g of rice

Speciality Ingredients

  • 3 tbsp of matcha, green tea powder
  • 10g of white miso

Spices & Dried Herbs

  • 100g of gochujang
