Ultimate KFC (Korean Fried Chicken)

Ingredients

Fresh Meat

  • 2 chicken drumsticks
  • 2 chicken thighs
  • 4 chicken wings, with tips

Store Cupboard

  • 30g of cornflour
  • 2 1/2 tsp sea salt
  • black pepper
  • 3 tbsp of ketchup
  • 2 tbsp of dark brown sugar
  • 2 tbsp of soy sauce
  • 64g of cornflour
  • 30g of plain flour
  • 1 tbsp of salt
  • 2 1/2 tsp garlic powder
  • 2 1/2 tsp onion powder

Bakery

  • 1/2 tsp baking powder
  • 1/4 tsp baking powder

Spices & Dried Herbs

  • 3 tbsp of gochujang
  • 2 tbsp of gochujang, (Korean chilli paste)

Oils & Vinegars

  • 1 tbsp of toasted sesame oil
  • vegetable oil, for frying

Salad & Fresh Herbs

  • 2 tsp fresh ginger, peeled and grated

Fruit & Vegetables

  • 2 garlic cloves, grated or finely chopped
  • 2 tbsp of chilli flakes, preferably gochugaru (Korean chilli flakes)

Speciality Ingredients

  • 20g of matzo meal, fine

Beverages

  • 90ml of vodka, or any other neutral tasting 40% alcohol
