Kerala-style sea bream and potato traybake with tangy okra 'chips'

Ingredients

Cooking Sauces

  • 1 Keralan curry sauce

Fruit & Vegetables

  • 2 medium potatoes, peeled and cut into 1–2cm cubes
  • 6 Padrón peppers, or 1 small green pepper
  • 1 dash of lemon juice
  • 175g of okra, topped and tailed, halved lengthwise and sliced lengthwise into 2–3 slices, depending on how big they are

Fish & Shellfish

  • 3 sea bream fillets

Store Cupboard

  • 70ml of chicken stock, or water
  • salt
  • pepper
  • 2 tbsp of gram flour

Oils & Vinegars

  • vegetable oil

Spices & Dried Herbs

  • chaat masala, to taste (around 2–3 tsp)
