Ingredients
Fresh Meat
4kg smoked gammon joint
Store Cupboard
1 handful of black peppercorns
65g of dark muscovado sugar
1 tsp salt
black pepper
Salad & Fresh Herbs
5 bay leaves
1 knob of fresh ginger, large, peeled
1 handful of thyme sprigs, leaves picked
Fruit & Vegetables
1 onion, peeled and quartered
1 celery stick, cut into 4
1 carrot, cut into rough chunks
8 garlic cloves
5 shallots, peeled and roughly chopped
Scotch Bonnet chillies, 6-8 depending on heat tolerance
3 limes, juiced
Spices & Dried Herbs
2 tbsp of allspice berries, ground in a pestle and mortar
2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp grated nutmeg
Beverages
1 tbsp of rum
