  • 100g of dark brown sugar
  • 200ml of dark soy sauce
  • 130g of honey, melted
  • 6g of garlic purée
  • 40g of dark soy sauce, (dark)
  • sesame seeds


  • 200ml of sake
  • 150ml of mirin
  • 15ml of water

Oils & Vinegars

  • oil
  • 55g of rice vinegar

Fruit & Vegetables

  • 45g of lemon juice
  • lemon, cut into wedges

Spices & Dried Herbs

  • 20g of pickled ginger, finely chopped
  • green chillies, (mild) thinly sliced
