1kg pork neck, ideally Iberico pork collar or the fattiest pork collar you can find
Beverages
150g of sake
75g of mirin
Fruit & Vegetables
1 garlic clove, peeled but left whole
20g of leek, sliced
1 bunch of spring onions, sliced
Store Cupboard
50g of caster sugar
100g of honey
400g of Japanese short grain rice
6 egg yolks
6 tbsp of toasted sesame seeds, to garnish
Tabasco
Cooking Sauces
150g of light soy sauce
500g of light soy sauce, (you may need more or less)
Oils & Vinegars
100g of vegetable oil
Salad & Fresh Herbs
1/2 bunch of coriander, chopped
