Iberian pork rice bowl


Fresh Meat

  • 1kg pork neck, ideally Iberico pork collar or the fattiest pork collar you can find


  • 150g of sake
  • 75g of mirin

Fruit & Vegetables

  • 1 garlic clove, peeled but left whole
  • 20g of leek, sliced
  • 1 bunch of spring onions, sliced

Store Cupboard

  • 50g of caster sugar
  • 100g of honey
  • 400g of Japanese short grain rice
  • 6 egg yolks
  • 6 tbsp of toasted sesame seeds, to garnish
  • Tabasco

Cooking Sauces

  • 150g of light soy sauce
  • 500g of light soy sauce, (you may need more or less)

Oils & Vinegars

  • 100g of vegetable oil

Salad & Fresh Herbs

  • 1/2 bunch of coriander, chopped
