Hot-smoked cod with tomatoes and cod's roe

Ingredients

  • 720g of cod loin, pin-boned, skin on
  • 50g of smoked cod roe, (skinned weight)

Beverages

  • 1l water

Store Cupboard

  • 150g of salt
  • 1.5g of Maldon salt
  • 8g of Panko breadcrumbs
  • 5g of Dijon mustard

Salad & Fresh Herbs

  • 1/2 bunch of dill, stalks and fronds separated

Fruit & Vegetables

  • 1 lemon, zested
  • 1 lime, zested
  • 4 plum tomatoes
  • 1/4 red chilli, (remove seeds if preferred)
  • 1/2 garlic clove
  • 10ml of lemon juice
  • 500g of ripe tomatoes, a mixture of varieties, at room temperature

Oils & Vinegars

  • rapeseed oil
  • 5ml of rapeseed oil
  • 4ml of sherry vinegar
  • 125ml of vegetable oil
  • rapeseed oil
  • white wine vinegar

Spices & Dried Herbs

  • 6 sticks of lemongrass (1), split lengthways and halved

Cooking Sauces

  • 75ml of passata

  • 1/2 slice of bread, fried in rapeseed oil until golden
