Ingredients

  • 1 tbsp of dried yeast, active
  • 1 tsp sugar
  • 350g of strong white flour
  • 100g of strong wholemeal flour
  • 1/2 tsp salt
  • 50g of caster sugar
  • 75g of sultanas
  • 75g of dried apricots, chopped
  • 75g of mixed peel
  • 1 egg, beaten
  • 4 tbsp of flour, white but unbleached
  • 1 tbsp of caster sugar
  • 1 egg, beaten with 1 tbsp milk to make an egg wash
  • 2 tbsp of sugar

Beverages

  • 125ml of water, warm
  • 2 tbsp of water, cold
  • 2 tbsp of water

Spices & Dried Herbs

  • 2 tsp mixed spice

Dairy

  • 125ml of milk, warm
  • 50g of butter, melted
