Store Cupboard

  • 540g of strong white flour, plus extra for dusting
  • 60g of tapioca flour
  • 38g of salt
  • 15g of caster sugar
  • 10g of salt


  • 300ml of water
  • 1.5l water
  • 12g of mirin

Speciality Ingredients

  • 15g of kombu
  • 15g of bonito flakes

Cooking Sauces

  • 24g of usukuchi soy sauce, (Japanese light soy sauce)

Fruit & Vegetables

  • 1 bunch of spring onions, finely sliced, to garnish
