Halibut ceviche with mango and passion fruit

Ingredients

  • 420g of halibut, skinned and pin-boned

Fruit & Vegetables

  • 1/2 lime, juiced
  • 1 tomato, skinned deseeded and diced
  • 45ml of lemon juice
  • 200g of plum tomatoes, flesh only - skin and seeds removed
  • 1 small shallot, finely chopped
  • 1 garlic clove, finely chopped
  • 30g of mango, diced
  • 3 passion fruits

Alcohol

  • tequila to taste

Spices & Dried Herbs

  • 1 sprig of fresh coriander
  • 1 bouquet garni

Store Cupboard

  • flaky sea salt
  • 1 pinch of salt, small
  • 50g of caster sugar
  • 15g of caster sugar
  • 5g of salt
  • croutons, very small

Salad & Fresh Herbs

  • 25g of coriander leaves

Oils & Vinegars

  • 70ml of groundnut oil
  • 50g of white wine vinegar
  • 50ml of olive oil
