Gurkha chicken cardamom curry

Ingredients

Fresh Meat

  • 2kg chicken thigh

Dairy

  • 250ml of natural yoghurt

Spices & Dried Herbs

  • 8 cardamom pods, crushed to release the seeds
  • 1 tbsp of ginger, peeled and grated
  • 1 1/2 tsp fennel seeds
  • 1 cinnamon stick
  • 4 cloves
  • 2 tsp cumin seeds
  • 1 tsp ground turmeric
  • 1 tbsp of ground cumin
  • 1 tbsp of ground coriander
  • fresh coriander, to garnish

Fruit & Vegetables

  • 1 bulb of garlic, all cloves peeled and finely minced
  • 1 tsp chilli powder, hot
  • 1 large onion, peeled and finely diced
  • 4 tomatoes, large, roughly chopped

Oils & Vinegars

  • 4 tbsp of vegetable oil

Salad & Fresh Herbs

  • 1 bay leaf
