Gaeng som pla – Sour orange curry of sea bass and bamboo

Ingredients

Spices & Dried Herbs

  • 9 dried bird's eye chillies
  • 1 tbsp of fresh galangal, chopped
  • 3 tbsp of tamarind water, (or use tamarind concentrate)

Salad & Fresh Herbs

  • 6 red bird's eye chillies , (fresh)

Store Cupboard

  • 1 tsp salt
  • 300mm of fish stock
  • 2 tbsp of fish sauce
  • 1 tsp palm sugar, (or caster sugar)

Fruit & Vegetables

  • 1 tbsp of garlic
  • 3 tbsp of shallots, chopped

Cooking Sauces

  • 1 tbsp of shrimp paste

Fish & Shellfish

  • 300g of sea bass, gutted, cleaned and descaled

Speciality Ingredients

  • 40g of cooked bamboo, drained and chopped into bite size pieces
