Fried chicken brioche with elderflower pickled cucumber

Ingredients

Spices & Dried Herbs

  • 1/4 tsp cayenne pepper
  • 1/4 tsp paprika
  • 1/4 tsp celery salt
  • 1/4 tsp garlic granules
  • 1/4 tsp dried oregano

  • 4 boneless chicken thighs, (skin removed)

Dairy

  • 150ml of buttermilk

Store Cupboard

  • 1 tsp salt
  • 150g of plain flour
  • 2 tbsp of cornflour
  • 4 tbsp of mayonnaise

  • 1 whole egg

Fruit & Vegetables

  • 1/2 cucumber

Beverages

  • 2 tbsp of elderflower cordial (1)

Oils & Vinegars

  • 2 tbsp of white wine vinegar
  • 1l vegetable oil, or another neutral oil, for deep-frying

Bakery

  • 4 brioche buns

Salad & Fresh Herbs

  • 4 baby gem lettuce leaves
