Flautas de papa – crispy potato tacos

Ingredients

Fruit & Vegetables

  • 500g of waxy potatoes, cut into 3cm cubes
  • 3 garlic cloves
  • 1 red onion, thinly sliced into half moons
  • 1 lime, cut into wedges
  • 1 avocado, sliced
  • 2 radishes, thinly sliced

Delicatessen

  • 1 guajillo chilli pepper

Spices & Dried Herbs

  • 1 cascabel chilli

Salad & Fresh Herbs

  • 1 bay leaf
  • 1 romaine lettuce, shredded
  • 1/2 bunch of coriander, finely chopped

Store Cupboard

  • 1 pinch of salt

Oils & Vinegars

  • 300ml of rapeseed oil, for deep-frying

Bakery

  • 12 corn tortillas, around 15cm in diameter

Dairy

  • 50ml of sour cream, or crème fraiche

Cooking Sauces

  • hot sauce, to taste

Cheese

  • 100g of feta, crumbled
