Ingredients

Fresh Meat

  • 1kg beef featherblade, cut into 4 equal portions

Store Cupboard

  • 3 tbsp of oyster sauce
  • 500ml of beef stock
  • honey, to taste

Cooking Sauces

  • 1 tbsp of light soy sauce

Beverages

  • 3 tbsp of dry sherry

Fruit & Vegetables

  • 1 red chilli, chopped
  • 1 butternut squash

Spices & Dried Herbs

  • 1 knob of ginger, about 5cm long, peeled and grated
  • 1 tsp nutmeg

Oils & Vinegars

  • groundnut oil, for frying

Salad & Fresh Herbs

  • 3 tbsp of thyme leaves, chopped
  • 1 bunch of watercress

  • 1 knob of butter
