  • 1 1/2 egg whites, lightly beaten
  • 50g of caster sugar
  • 75g of egg yolk
  • 32g of caster sugar
  • 25g of tempura flour
  • icing sugar for dusting, sifted
  • 1 tbsp of freeze-dried strawberries, crumbled

Beverages

  • 55g of water
  • 1 dash of water
  • 40g of sparkling water, chilled

Fruit & Vegetables

  • 5g of lemon juice
  • 125g of strawberries

Speciality Ingredients

  • 12g of sorbet stabiliser
  • 90g of sprigs of fresh elderflower
  • 6g of glucose syrup
  • 5 sprigs of fresh elderflower, broken into individual clusters

Dairy

  • 310g of double cream
