  • 2 egg whites, free range
  • 50g of Panko breadcrumbs (1), lightly toasted
  • sea salt, fine
  • rock salt
  • pepper
  • black pepper, freshly ground

Dairy

  • 250ml of double cream, chilled
  • 50ml of double cream
  • 20g of butter, plus extra, melted

Oils & Vinegars

  • sunflower oil

Fruit & Vegetables

  • 100g of chanterelles, or brown chestnut mushrooms, finely chopped
