Duck dumplings

Ingredients

Fresh Meat

  • 200g of duck, cooked and shredded

Fruit & Vegetables

  • 4 spring onions, trimmed and very finely chopped
  • 1 garlic clove, crushed to a paste
  • 1 red chilli, large, deseeded and very finely chopped

Spices & Dried Herbs

  • 1 tbsp of ginger, grated
  • 1 tsp Chinese five-spice powder

Store Cupboard

  • 1 tbsp of hoisin sauce, large
  • salt
  • black pepper
  • soy sauce, to serve

Speciality Ingredients

  • 30 wonton skins

Beverages

  • 1 dash of rice wine, shaoxing, or dry sherry
  • 75ml of water, plus extra to seal
