Deer stalker pie

Ingredients

Oils & Vinegars

  • 200g of onion, very finely diced

Store Cupboard

  • 1 tsp Demerara sugar
  • 8 black peppercorns
  • 2 tbsp of plain flour, seasoned with salt and pepper
  • sea salt, to taste
  • 200g of breadcrumbs
  • 20g of fresh yeast
  • sea salt, to taste
  • 250g of plain flour

Salad & Fresh Herbs

  • 1 bay leaf
  • 5 sprigs of thyme
  • 25g of parsley, finely chopped
  • 1 sprig of fresh thyme

Speciality Ingredients

  • 1 tbsp of white miso, heaped

Spices & Dried Herbs

  • 1 tsp fennel seeds

Fresh Meat

  • 1kg venison shoulder, preferably in whole muscle groups, or cut into large pieces
  • 100g of bone marrow, rendered

Dairy

  • 50g of unsalted butter
  • 100g of double cream
  • 50g of whole milk
  • 25g of unsalted butter
  • 125g of unsalted butter, chilled and diced

Cheese

  • 60g of cheddar, ideally Montgomery cheddar, finely grated
