Deep-fried lemon sole with cucumber salad and lime mayonnaise

Ingredients

  • 2kg lemon sole, skinned and filleted

  • 30g of flat-leaf parsley
  • 30g of chives
  • 30g of basil
  • 2 tbsp of dill, chopped

  • 2 eggs, whisked
  • 100g of plain flour
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 egg yolk
  • 1 tsp English mustard

  • oil, for frying
  • 250ml of olive oil
  • 50ml of white wine vinegar
  • 50ml of rapeseed oil

  • 1 lime, zest and juice

  • 2 gherkins, large, sliced
