Crispy pig's ears with nasturtium and caper tartare sauce

Ingredients

Fresh Meat

  • 2 fresh pigs' ears

Fruit & Vegetables

  • 1 carrot, large dice
  • 1 shallot, large dice
  • 1/2 leek, large dice
  • 50g of shallots, finely diced
  • 25g of gherkins, finely chopped
  • 1/2 lemon, juiced

Spices & Dried Herbs

  • 6 peppercorns

Salad & Fresh Herbs

  • 1 bay leaf
  • 1 sprig of fresh thyme
  • 1 tbsp of flat-leaf parsley, finely chopped

Store Cupboard

  • 100g of plain flour
  • 2 eggs
  • Panko breadcrumbs (1)
  • 100g of homemade mayonnaise, store bought will also work
  • 25g of capers, finely chopped
  • 1 egg, hard boiled

Dairy

  • 50ml of whole milk

Oils & Vinegars

  • vegetable oil

Speciality Ingredients

  • 1 handful of nasturtium flowers and leaves, if available
