Cod popcorn with cucumber and potato salad

Ingredients

  • 200g of cod fillet, boneless, cut into 1cm cubes

  • 150g of plain flour
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 2 tbsp of mayonnaise
  • 1 pinch of salt

Bakery

  • 2 1/2 tsp baking powder

Dairy

  • 125ml of milk
  • 2 tbsp of buttermilk

Fruit & Vegetables

  • 2 shallots, chopped
  • 2 spring onions, chopped
  • 4 large potatoes
  • 1 cucumber, peeled and cut into ribbons

Oils & Vinegars

  • 1000ml of vegetable oil

Salad & Fresh Herbs

  • 1 bunch of chives, chopped
