Fritelle di Merluzzo (Cod and vegetable fritters)

Ingredients

Fish & Shellfish

  • 500g of cod, skinned and boned

Dairy

  • 25g of butter, melted
  • 150g of butter
  • 100ml of milk

Oils & Vinegars

  • 30ml of olive oil, plus extra to serve
  • oil, neutral, for deep frying

Fruit & Vegetables

  • 2 carrots, finely chopped
  • 1 onion, finely chopped
  • 1/2 swede, finely chopped
  • 1 cabbage, finely chopped
  • 2 large potatoes, chopped into cubes
  • 1 lemon, juice and zest
  • 2 lemons, cut into wedges

Store Cupboard

  • Panko breadcrumbs, 1 packet
  • 2 egg whites
  • rock salt
  • mayonnaise

Salad & Fresh Herbs

  • 1 handful of chopped parsley
  • 1 handful of chopped chervil
