Coconut cream cake

Ingredients

Store Cupboard

  • 160g of plain flour
  • 1/4 tsp bicarbonate of soda
  • 1 pinch of salt
  • 140g of sugar
  • 3 large eggs, seperated
  • 1/2 tsp vanilla extract
  • 60ml of coconut milk
  • 25g of icing sugar
  • 1/2 tsp vanilla extract
  • 120ml of coconut cream, or replace with 1/4 cup coconut milk powder
  • 5 tbsp of desiccated coconut
  • 1 tsp icing sugar

Bakery

  • 1 tsp baking powder

Dairy

  • 85g of unsalted butter, at room temperature
  • 120ml of buttermilk
  • 190ml of double cream, cold
